50 g egg (1 large egg)
Lemon Sugar Glaze
230 g powdered sugar (1 ¾ cups)
80–100 g fresh lemon juice (⅓ – ½ cup)
Banana Pastry Cream
480 ml whole milk (2 cups)
100 g sugar (½ cup)
4 egg yolks
25 g cornstarch (3 tbsp)
Pinch of salt
30 g butter, cold, cubed (2 tbsp)
1 tsp vanilla extract
225 g mashed ripe bananas (1 cup, about 2 medium)
Optional: 1 tbsp dark rum or banana liqueur
