  • 120 g yogurt (½ cup)

  • 100 g whole milk (just under ½ cup)

  • 100 g toasted walnuts (1 cup, chopped)

  • 50 g egg (1 large egg)


Lemon Sugar Glaze

  • 230 g powdered sugar (1 ¾ cups)

  • 80–100 g fresh lemon juice (⅓ – ½ cup)


Banana Pastry Cream

  • 480 ml whole milk (2 cups)

  • 100 g sugar (½ cup)

  • 4 egg yolks

  • 25 g cornstarch (3 tbsp)

  • Pinch of salt

  • 30 g butter, cold, cubed (2 tbsp)

  • 1 tsp vanilla extract

  • 225 g mashed ripe bananas (1 cup, about 2 medium)

  • Optional: 1 tbsp dark rum or banana liqueur

Use very ripe bananas for maximum sweetness and flavor.
