How to Make a Burger Like a Chef – Grind, Season & Assemble Like a Pro


House Burger Blend

Ingredients:

  • 2 lb chuck (900 g)

  • 1 lb brisket (450 g)

  • 1 lb short rib (450 g)


Method:

  1. Trim any excess fat, silver skin, or sinew from the meats.

  2. Cut all three cuts — chuck, brisket, and short rib — into small cubes (about 1-inch pieces).

  3. Chill the meat in the freezer for 15–20 minutes to firm it up for a clean grind.

  4. Grind the meat through a medium die on your Valley Sportsman Meat Grinder.

  5. Gently mix the ground meat just until evenly combined — do not overwork.

  6. Portion into 8 oz (225 g) patties and chill until ready to cook.


Chef’s Note:This 50% chuck, 25% brisket, 25% short rib blend gives the perfect ratio of fat, flavor, and tenderness.


🥒 Quick Chili-Spiced Pickles Recipe

Ingredients:

  • 240 ml rice vinegar

  • 120 ml water

  • 40–60 g sugar

  • 1 tbsp each: fennel seeds, coriander seeds, black peppercorns, mustard seeds

  • 1 chili, 1 shallot, 6 ice cubes


Method:

  1. Combine vinegar, water, sugar, and spices in a small saucepan.

  2. Bring to a simmer, dissolve sugar, then remove from heat.

  3. Add 6 ice cubes to cool.

  4. Pour over sliced cucumbers, carrots, or onions.

  5. Let stand 30 mins or refrigerate for 1 hr before serving.


Chef’s Note:Crisp, aromatic, and slightly spicy — these pickles add the perfect contrast to your burger’s richness.


🧅Caramelized Onion Confit Recipe

Ingredients:

  • 3 large yellow onions, sliced

  • 115 g brown butter

  • 3 tbsp sugar

  • Kosher salt & black pepper


Method:

  1. Melt brown butter in a heavy pan over low heat.

  2. Add onions, sugar, salt, and pepper.

  3. Cook slowly for 1–2 hours until jammy and golden brown.


Chef’s Note:Patience is key — let the onions gently caramelize until they reach deep, rich sweetness.


🌶️Calabrian Chili Aioli Recipe

Ingredients:

  • 1 egg + 2 yolks

  • 1 clove fresh garlic + 20 cloves roasted garlic

  • 1 tbsp Calabrian chili paste

  • 1 tbsp Dijon mustard

  • Juice and zest of 1 lemon

  • 2 tbsp sherry vinegar

  • 200–300 ml avocado oil

  • Salt & pepper


Method:

  1. Add egg, yolks, garlics, chili paste, mustard, lemon juice, and vinegar to blender.

  2. Blend smooth.

  3. Slowly drizzle in oil until thick and creamy.

  4. Season to taste.


🥓 Crispy Bacon Lardons

Cook 1 pack of uncured bacon slowly in a cast-iron pan until golden and crisp. Drain on paper towels.
