1 g dried yeast (¼ tsp)
100 g sourdough starter (½ cup)

10 g salt (1 ½ tsp)
62 ml water (¼ cup + 1 tsp)

Ingredients
500 g King Arthur bread flour (4 cups)
250 ml water (1 cup + 1 tbsp)
2 g dried yeast (½ tsp)
Next Day
10 g salt (1 ½ tsp)
112 g water (just under ½ cup)
🍅 San Marzano Sauce
3–4 tbsp olive oil
10–20 cloves garlic
1–2 tbsp Calabrian chilies or chili flakes
4–5 sprigs fresh oregano
1 can San Marzano tomatoes (518 g / 18 oz / ~2 cups crushed)
6–8 fresh basil leaves
🧄 Garlic Confit Oregano Oil
120 ml garlic confit oil (½ cup)
10–15 garlic confit cloves
5 sprigs fresh oregano, chopped
🌶️ Hot Honey
85 g fresh local honey (¼ cup)
A few dashes of hot sauce (to taste)
2 tbsp Calabrian chili or chopped chili of your choice
